INGREDIENTS:
For Masala:
- Cloves - 6 no
- Star anise - 1 small
- Marathi moggu (capok buds) - 1 small
- Cardamom - 4 no
- Cinnamon - 1 1/2 inch
- Coriander seeds - 1 tablespoon
- Cumin seeds - 1/2 tablespoon
For Boiled Chicken:
- Chicken - 500g
- Green chilli - 4 no
- Cloves - 4 no
- Cinnamon - 1 inch
- Bay leaf - 1 no
- Caradamom - 2 no
- Ginger garlic paste - 1/2 tablespoon
- Turmeric - 1/2 teaspoon
- Salt to taste
- Water to boil
For Spicy Chicken Roast:
- Onion - 1 small
- Curry leaves - 1 sprig
- Ginger garlic paste - 1/2 tablespoon
- Red chili powder - 1/2 tablespoon
- Red chili flakes - 1 tablespoon
- Coriander leaves - 1 tablespoon
- Oil - 4 tablespoon
DIRECTIONS:
Preparing Masala:
- Heat a thick bottom pan on low flame and add the cloves, star anise, marathi moggu (capok buds), cardamom, cinnamon, coriander seeds, cumin seeds. Saute them for 2 minutes until they release their aromatic fragrance.
- Transfer the sautéed spices to a separate bowl and let them cool.
- Once cooled, add the sautéed spices to a blender and grind to a fine powder.
Preparing Boiled Chicken:
- To a bowl add the Chicken, green chilli, cloves, cinnamon, bay leaf, caradamom, ginger garlic paste, turmeric, salt and water.
- Place the bowl on the stove over medium heat and boil until the chicken is 80% cooked.
- Drain the broth into a separate bowl.
Preparing Spicy Chicken Roast:
- Heat the oil in a pan on low flame.
- Add the onions and saute for 2 minutes.
- Add the curry leaves and ginger garlic paste and saute till aromatic.
- Add the boiled chicken to the pan on high flame and saute for 5 minutes.
- Add 1 tablespoon of the ground masala, red chilli powder and 100-200 ml of the chicken broth. Saute for 5 minutes. There is no right quantity to pour broth.
- Adjust the salt and add more broth if needed.
- Continue to sauté until the chicken is completely cooked.
- Finally, add the red chili flakes and coriander leaves, mix well, and then turn off the flame.
