Burmese Egg Bhejo Recipe - A Delicious Street Food Delight

Ingredients:

  • 4 boiled eggs
  • Pinch of tamarind
  • 2-3 teaspoons water
  • Oil for frying
  • 1 thinly sliced onions
  • Sliced garlic - 8 cloves
  • 8 dried red chilies
  • 1 teaspoon oil (used for deep frying)
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon juice
  • Coriander leaves

Directions:

Boil the Eggs:

  • Boil the eggs in water for 10 minutes.
  • Remove them from heat, let them cool, and peel the shells.

Prepare the Salt Water and Lemon Water:

  • In a small bowl, mix 1/2 teaspoon of salt with 2-3 teaspoons of water to dilute it.
  • In another bowl, mix lemon juice with 2-3 teaspoons of water.
Prepare the Tamarind Juice:
  • Soak a pinch of tamarind in 2-3 teaspoons of water.
  • Squeeze the tamarind to extract the juice, discarding the pulp.

Fry the Onions, Garlic, and Red Chilies:

  • Heat oil in a pan or kadai over low flame.
  • Add thinly sliced onions and fry until golden brown.
  • Remove the fried onions from the oil and drain excess oil and transfer to a plate.
  • In the same pan, add sliced garlic and fry until light brown.
  • Remove the fried garlic from the oil and drain excess oil and transfer to a plate.
  • Fry the red chilies in the remaining oil and transfer them to a plate.

Prepare the Chili Mixture:

  • Once the chilies are cooled, grind them in a mixer.
  • Transfer the ground chili mixture to a bowl and add 1 teaspoon of oil used for deep frying. Mix well.

Assemble the Egg Bhejo:

  • Carefully make a slit in each boiled egg without cutting till the end.
  • Fill the eggs with fried onions, fried garlic, crushed chili-oil mixture, a few drops of tamarind juice, a few drops of salt water, and a few drops of lemon water.
  • Garnish with coriander leaves.
