Nellore Ghee Karam (Spicy) Dosa

Originating from the coastal city of Nellore in Andhra Pradesh, this dosa is famous for its fiery spice blend and irresistible flavors. Nellore Ghee Karam dosa

Ingredients:

  • Dosa batter
  • Ghee
  • Dry red chilly - Long ones (12 no)
  • Onion (3 medium sized)
  • Garlic (2 peeled cloves)
  • Cumin seeds (1/4 table-spoon)
  • Salt as per taste

 Directions to prepare the Nellore Karam:

  • Chop the onions so that it grinds well in the mixer
  • Grind the chopped onions, dry red chilly, garlic cloves, cumin seeds and salt together without adding any water; and keep it aside

 
Making Nellore Ghee Karam Dosa:
  • Keep the flame high and pour a ladleful of batter onto the tawa and spread it in a circular motion to make a nice and thin dosa.
  • Drizzle a tea-spoon of ghee around the edges and on top of the dosa.
  • Wait for a minute to allow the batter to cook.
  • Spread a spoonful (table-spoon) of Nellore Karam and 1/2 table-spoon ghee evenly over the dosa.
  • Allow the dosa to cook until the edges turn golden and crisp. Do not flip the dosa.
  • Fold the dosa and transfer it to a plate and repeat the process with the remaining batter and Nellore Karam.

 Serving:
  • Upto 6 to 8 dosas can be made with the above amount of ingredients.
  • Serve the Nellore Karam Dosa hot with coconut chutney, tomato chutney, or peanut chutney.
