Delicious Rice Kheer Recipe (Paal Payasam)

INTRODUCTION: 

Rice Kheer, also known as Indian rice pudding, is a delightful and creamy dessert that's loved by people of all ages. INGREDIENTS:

  • Matta broken rice - 4 tbsp (60g)
  • Full cream milk - 1 litre
  • Cashew nuts - 5 nos
  • Almonds - 5 nos
  • Cardamom powder - 1/4 tsp 
  • Ghee - 2 tsp
  • Jaggery - 120g
  • Water - 80 ml
  • Pistachios - for garnish



DIRECTIONS:

  • Wash the matta broken rice thoroughly to remove any excess starch and soak it in water for 30 mins. Drain the water after 30 mins and set the rice aside.
  • Heat heavy-bottomed pan or a large saucepan on low flame and add the full cream milk and bring it to a boil. 
  • Once the milk comes to a boil, add the soaked and drained rice to the milk on medium flame. Stir occasionally to prevent the rice from sticking to the bottom.
  • Cook the rice in the milk for 20-25 minutes or until the rice is fully cooked and the kheer thickens. Make sure to stir frequently to avoid scorching.
  • Heat a separate pan on medium flame and add the jaggery and water. Stir until the jaggery dissolves completely in the water, creating a jaggery syrup.
  • Filter the jaggery syrup into the kheer and stir well. This will add sweetness and a rich flavor to the kheer.
  • Immediately, add the chopped cashew nuts, almonds and cardamom powder to the kheer. Mix it well and cook on low flame for an additional 5-10 minutes.
  • Once the kheer has thickened to your desired consistency, add the ghee. Give it a mix and turn off the heat. 
  • Garnish with the remaining chopped nuts and pistachios.
