- Beetroot - 400g (grated - 350g)
- Cashew nuts - 100g
- Green chilli - 2 no.(finely chopped)
- Garlic - 10 cloves (finely chopped)
- Cardamom powder - 1/4 teaspoon
- Cumin powder - 1/4 teaspoon
- Red chilli powder - 1/2 teaspoon
- Coriander leaves - 1 tablespoon
- Water - 2 tablespoons
- Salt to taste
- Ghee - 5 tablespoons
DIRECTIONS:
- Heat a pan on low flame and add 2 tablespoons of ghee and cashew nuts.
- Roast the cashew nuts till golden brown and transfer it to a separate bowl and let them cool.
- Once cooled, add the roasted cashew nuts to a blender and grind coarsely.
- To the same pan add 2 tablespoons of ghee on low flame.
- Add the finely chopped green chilli and garlic to the pan and saute for 2 minutes.
- Add the grated beetroot and saute for 20 minutes or until the beetroot is cooked completely.
- Add the cardamom powder, cumin powder, red chilli powder, salt and coriander leaves, mix well.
- Sprinkle the water and saute for 2 minutes on low flame.
- Now, add the ground cashew nuts to the pan, mix well and saute for 2 minutes.
- Transfer the beetroot and cashew mixture to a separate bowl and let it cool down slightly.
- Shape the mixture into patty like discs and set aside.
- Heat a tawa on low flame and add 1 tablespoon of ghee.
- Place the tikkis on the pan and fry on both sides until they turn light golden.
- Once the tikkis are golden brown, remove them from the pan.
- Serve these beetroot tikkis hot with your favorite chutney or dip.
