Jigarthanda: Madurai's Unique Beverage

 

INTRODUCTION: 

Jigarthanda, meaning "cool heart" in Tamil, is a beloved and iconic cold beverage that hails from the vibrant city of Madurai in Tamil Nadu, South India. Renowned for its refreshing taste and unique blend of ingredients, Jigarthanda has earned a special place in the hearts of locals and travelers alike.

RECIPE IN A SHORT VIDEO:

INGREDIENTS:

For Sugar Syrup:
  • Sugar - 100g
  • Boiled water - 100ml

For Almond Gum Jelly:

  • Almond gum (Badam pisin) - 5g
  • Water - 80ml

For Kova/Koya:

  • Full fat milk - 500ml
  • Sugar - 2 tbsp
For Chilled Sweetened Milk:
  • Full fat milk - 500ml
  • Sugar - 2 tbsp

Other Ingredients:

  • Vanila ice cream - 6 tbsp
  • Indian sarsaparilla (Nannari) syrup - 30ml (2 tbsp)

 
DIRECTIONS:

1. Preparing Almond Gum Jelly:

  • Soak the almond gum with water overnight or for 8 hours to get the almond gum jelly.

2. Preparing Sugar Syrup:

  • In a thick pan over low flame, add the sugar.
  • Once the sugar melts and caramelizes, add the hot water and stir continuously to make sugar syrup.
  • Turn off the flame and allow it to cool down.

3. Preparing Sweetened Milk:

  • In a separate pan over low flame, add the milk.
  • Once the milk has boiled over, add 2 tablespoons of sugar and half the quantity of caramelized sugar syrup. Stir continuously for 5 minutes.
  • Turn off the flame and allow the milk to cool down.
  • Refrigerate the cooled milk for 3 hours.

4. Preparing Ice Cream:

  • To a mixing bowl, add the vanilla ice cream and the remaining half quantity of caramelized sugar syrup. Mix well.
  • Freeze the ice cream for 3 hours.

5. Preparing Khoya/Kova:

  • In a separate pan over low flame, add the milk.
  • Stir the milk continuously while it heats up to prevent it from sticking to the bottom and sides of the pan for 30 minutes.
  • Add 2 tablespoons of sugar to the milk and stir the mixture continuously for 20 minutes.
  • Turn off the flame once you get smooth kova/khoya and transfer it to a separate bowl.
  • Make sure the kova/khoya is not too thick.

6.Preparing the Jigarthanda:

  • In a glass, add 1 tablespoon of almond gum, 1 tablespoon of nannari syrup, and 1 tablespoon of khoya/kova.
  • Pour the chilled milk over the mixture and add the vanilla ice cream, mix well.
  • Add a scoop of ice cream on top and serve.
