Quick and Flavorful Hariyali Chicken Curry: No-Marination Recipe

INGREDIENTS:

  • Chicken - 500g
  • Fresh coriander leaves (cilantro) - 1/2 cup (35g), washed and roughly chopped
  • Fresh mint leaves - 1/4 cup (10g), washed and roughly chopped
  • Curry leaves - 1 sprig
  • Green chilies - 8
  • Ginger - 2 inches, peeled and roughly cut
  • Garlic cloves - 10
  • Onion - 2 medium size, roughly cut
  • Yogurt/curd - 3 tablespoons (75g)
  • Lemon juice - 1 teaspoon
  • water - 500ml
  • Turmeric powder - 1 teaspoon
  • Garam masala - 1 tablespoon
  • Salt to taste
  • Oil - 5 tablespoons


DIRECTIONS:

  • In a blender, add coriander leaves, mint leaves, curry leaves, green chilies, ginger, garlic, onion, yogurt, and lemon juice. Blend them into a smooth paste without adding water.
  • Heat oil in a pan or kadai over medium heat.
  • Add the chicken pieces, salt and turmeric powder to the pan. Cook for 10 minutes or until the chicken is lightly browned on all sides.
  • Once the chicken is browned, add the freshly ground green paste (coriander-mint mixture) to the pan and mix well. Cook for another 5 minutes over medium flame, allowing the flavors to blend together.
  • Add 500ml water to blender to prepare the green paste residue and add it to the pan.
  • Add garam masala and adjust the salt if required and mix well.
  • Cover the pan and let the chicken cook in the gravy for about 20 minutes or until it is cooked through and tender. Stir occasionally to prevent sticking to pan if required.
  • Once the chicken is cooked, check for seasoning and adjust the salt or spices if needed.
  • Garnish with julienne ginger and serve hot with rice, naan, or roti.
