Black Chana Vada - A Tea Time Snack Recipe

INGREDIENTS:

  • Black chana - 150g
  • Fennel seeds - 1 tablespoon
  • Hing - 1/4 teaspoon
  • Green chili - 3 nos
  • Ginger - 1 inch
  • Cinnamon - 1 inch
  • Cloves - 3 nos
  • Curry leaves - 1 sprig
  • Coriander leaves - 1 tablespoon
  • Mint leaves - 1 handful
  • Onion - 1 (big), finely chopped
  • Salt to taste

DIRECTIONS:

  • Wash the black chana thoroughly and soak for at least 5 hours or overnight to soften them.
  • After soaking, drain the black chana.
  • In a blender, add the drained black chana, fennel seeds, hing, green chili, ginger, cinnamon, cloves, curry leaves, coriander leaves, and mint leaves. Pulse the mixture until it becomes a coarse paste without adding water. Ensure not to over-process; the mixture should retain some texture.
  • Transfer the ground mixture to a seperate bowl and add the finely chopped onionand salt. Mix everything well to evenly distribute the flavors.
  • Take a small portion of the mixture and shape it into vada (round patties). Repeat the process for rest of the mixture.
  • Heat the oil in a deep pan or kadai over medium flame for deep frying. Ensure the oil is hot but not smoking.
  • Carefully drop the shaped vadas into the hot oil and fry them on medium heat until they turn golden brown and crispy on all sides. Fry them in batches, if needed, to avoid overcrowding the pan.
  • Once the vadas are fried, remove them from the oil using a slotted spoon.
  • Serve your crispy black chana vadas with hot tea.
