Atukula Mixture and Bhel Chaat - Easy Snack Recipe

INGREDIENTS:

For Atukula Mixture:

  • Thin flattened rice (atukulu/aval/poha) - 250g
  • Peanuts - 50g
  • Roasted gram - 25g
  • Mustard seeds - 1/2 teaspoon
  • Garlic cloves - 15, crushed
  • Curry leaves - 2 sprigs
  • Turmeric powder - 1 teaspoon
  • Oil - 6 tablespoons
  • Green chili - 8, slit
  • Sugar - 1/2 teaspoon
  • Salt to taste


For Atukula Bhel:

  • Onion - 1 (medium), finely chopped
  • Tomato - 1 (small), finely chopped
  • Coriander leaves - 2 tablespoon, finely chopped
  • Lemon juice - 1/2 teaspoon




DIRECTIONS:

Preparing Atukula Mixture:

  • Begin by sieving the thin flattened rice (atukulu/aval/poha) to remove any excess starch. This will help in making the flattened rice crispy.
  • Heat a thick pan over low flame and add the sieved thin flattened rice to it and roast until it becomes crisp. Keep stirring occasionally to ensure even cooking. This process will take about 5-7 minutes.
  • Remove it from heat and transfer to a separate bowl.
  • Heat the oil in a pan over medium flame and add the mustard seeds and let them crackle.
  • Add the crushed garlic, curry leaves, and slit green chilies. Saute for about a minute until the flavors are released and the garlic turns slightly golden.
  • Add the peanuts and roasted gram to the pan and saute them until they are nicely fried and turn slightly golden in color.
  • Now, sprinkle the turmeric powder over the mixture and saute for another minute to coat the ingredients evenly with the spice.
  • Turn off the flame and add salt and sugar to the pan. Mix well until the salt and sugar are evenly distributed throughout the mixture.
  • Mix the crisp flattened rice and the fried mixture together, ensuring that the spices and ingredients are thoroughly distributed.
