Spicy Roasted Paneer Masala with Mint Coriander Chutney: Flavors of India

Ingredients:

For Roasted Paneer:

  • 200g paneer, cut into cubes
  • 3/4 tablespoon red chilli powder
  • 3/4 teaspoon cumin powder
  • 3/4 teaspoon garam masala
  • 1/2 teaspoon turmeric Powder 
  • Salt, to taste 
  • 2 tablespoons ghee for roasting 
  • Coriander leaves for garnish

For Mint-Coriander Chutney:

  • 1 handful mint leaves
  • 1 handful coriander leaves
  • 2 garlic cloves
  • 4 small green chilies
  • 1 inch ginger
  • 1/2 medium sized onion
  • 1 tablespoon lemon juice
  • Salt, to taste
  • 1 tablespoon water

Directions:

Preparing Roasted Paneer Masala:

  • In a mixing bowl, add the paneer cubes, red chilli powder, cumin powder, salt, garam masala and turmeric powder. Mix them well and make sure the paneer cubes are well coated.
  • Allow the paneer to marinate for at least 15-20 mins.
  • Heat a frying pan over medium heat. Add the ghee and let it heat up for 30 seconds.
  • Carefully place the paneer cubes in the pan, making sure they are evenly spaced and not overcrowded. Leave some space between the cubes to allow them to cook evenly.
  • Let the paneer cubes cook undisturbed for 2-3 minutes on one side, or until they turn golden brown and develop a slightly crispy exterior.
  • Continue flipping the paneer cubes occasionally to ensure they are evenly roasted on all sides. Adjust the heat if necessary to prevent them from burning. 
  • Once the paneer cubes are roasted, remove them from heat and transfer to a serving dish. Garnish with freshly chopped coriander leaves.

Preparing Mint-Coriander Chutney:

  • In a blender, add the mint leaves, coriander leaves, garlic, green chilies, ginger, onion,  lemon juice, salt and water. Blend them until you achieve a smooth paste.

Note: Adjust the green chilies or salt or lemon juice according to your preference.
