Ingredients:
For Roasted Paneer:
- 200g paneer, cut into cubes
- 3/4 tablespoon red chilli powder
- 3/4 teaspoon cumin powder
- 3/4 teaspoon garam masala
- 1/2 teaspoon turmeric Powder
- Salt, to taste
- 2 tablespoons ghee for roasting
- Coriander leaves for garnish
For Mint-Coriander Chutney:
- 1 handful mint leaves
- 1 handful coriander leaves
- 2 garlic cloves
- 4 small green chilies
- 1 inch ginger
- 1/2 medium sized onion
- 1 tablespoon lemon juice
- Salt, to taste
- 1 tablespoon water
Directions:
Preparing Roasted Paneer Masala:
- In a mixing bowl, add the paneer cubes, red chilli powder, cumin powder, salt, garam masala and turmeric powder. Mix them well and make sure the paneer cubes are well coated.
- Allow the paneer to marinate for at least 15-20 mins.
- Heat a frying pan over medium heat. Add the ghee and let it heat up for 30 seconds.
- Carefully place the paneer cubes in the pan, making sure they are evenly spaced and not overcrowded. Leave some space between the cubes to allow them to cook evenly.
- Let the paneer cubes cook undisturbed for 2-3 minutes on one side, or until they turn golden brown and develop a slightly crispy exterior.
- Continue flipping the paneer cubes occasionally to ensure they are evenly roasted on all sides. Adjust the heat if necessary to prevent them from burning.
- Once the paneer cubes are roasted, remove them from heat and transfer to a serving dish. Garnish with freshly chopped coriander leaves.
Preparing Mint-Coriander Chutney:
- In a blender, add the mint leaves, coriander leaves, garlic, green chilies, ginger, onion, lemon juice, salt and water. Blend them until you achieve a smooth paste.
