Ingredients:
- 3 tablespoons black pepper
- 1 tablespoons fennel seeds
- 6 tablespoons cooking Oil
- 3 medium sized onion, finely chopped
- 2 tablespoons ginger-garlic paste
- 1 sprig of curry leaves
- 3 medium sized tomatoes finely chopped
- 1/2 teaspoon turmeric powder
- 1 tablespoon red chilli powder
- salt to taste
- 2 tablespoons coriander powder
- 3 to 4 tablespoons of water
- 400g mushrooms, stem-removed, sliced
Directions:
- In a blender, add the black pepper corns and fennel seeds, blend them until you obtain a fine powder and keep it aside.
- Heat oil in a large pan or kadai over medium heat. Add the chopped onions and stir fry them until they turn translucent.
- Add the ginger-garlic paste and stir fry for 2 minutes.
- Add the curry leaves and saute for a few seconds.
- Add the finely chopped tomatoes and saute until they are cooked or oil is separated.
- Now, add the turmeric powder, red chilli powder, salt and coriander powder to the pan. Mix well and add water. Saute for a couple of minutes.
- Add the sliced mushrooms to the pan and saute them for 2 minutes.
- Cover the pan with a lid and allow the mushrooms to cook for about 2 minutes on low heat.
- Remove the lid and stir fry until they release their moisture and start to shrink.
- Add the freshly ground black pepper and fennel seeds to the pan. Mix well and saute for 2 minutes or until the masala turns dark brown.
- Turn off the heat and move the mushroom masala to a serving bowl.
