Spicy Mushroom Pepper Masala - A Flavorsome Delight!

Ingredients:

  • 3 tablespoons black pepper
  • 1 tablespoons fennel seeds
  • 6 tablespoons cooking Oil
  • 3 medium sized onion, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 1 sprig of curry leaves
  • 3 medium sized tomatoes finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon red chilli powder
  • salt to taste
  • 2 tablespoons coriander powder
  • 3 to 4 tablespoons of water
  • 400g mushrooms, stem-removed, sliced
 

Directions:

  • In a blender, add the black pepper corns and fennel seeds, blend them until you obtain a fine powder and keep it aside.
  • Heat oil in a large pan or kadai over medium heat. Add the chopped onions and stir fry them until they turn translucent.
  • Add the ginger-garlic paste and stir fry for 2 minutes.
  • Add the curry leaves and saute for a few seconds.
  • Add the finely chopped tomatoes and saute until they are cooked or oil is separated.
  • Now, add the turmeric powder, red chilli powder, salt and coriander powder to the pan. Mix well and add water. Saute for a couple of minutes.
  • Add the sliced mushrooms to the pan and saute them for 2 minutes.
  • Cover the pan with a lid and allow the mushrooms to cook for about 2 minutes on low heat.
  • Remove the lid and stir fry until they release their moisture and start to shrink. 
  • Add the freshly ground black pepper and fennel seeds to the pan. Mix well and saute for 2 minutes or until the masala turns dark brown. 
  • Turn off the heat and move the mushroom masala to a serving bowl.
