Mastering Andhra Style Mirchi Bajji: Fiery Flavors

Ingredients:

  • 5 Bajji Chilies (Banana Peppers) - 130g
  • 70g gram flour
  • Tamarind - small lemon size
  • 1 onion finely chopped
  • 1 tablespoon coriander leaves, chopped
  • 1/4 teaspoon ajwain
  • 1/4 teaspoon red chilli powder for bajji batter
  • Water for batter preparation
  • Extra red chilli powder for seasoning
  • Chat masala for seasoning
  • 1/2 lemon
  • Salt to taste 
  • Cooking oil for deep frying 

Directions: 

  • Soak the tamarind in lukewarm water for 15 minutes, then squeeze it to make a fine paste.
  • In a mixing bowl, combine chopped onions, coriander leaves, and salt, and mix well.
  • In a separate bowl, mix gram flour, ajwain, red chili powder, and salt. Gradually add water to make a smooth, semi-thick batter.
  • Cut open the banana chilies vertically, remove the seeds, and apply the tamarind paste evenly inside.
  • Heat oil in a pan or kadai over medium heat. Check the oil temperature by dropping a small amount of batter. If it rises quickly, the oil is hot enough.
  • Coat the banana chilies with the mixed batter and carefully drop them into the hot oil. Fry them for 3 to 4 mins or until they turn light brown.
  • Avoid overcrowding the pan; fry in batches if needed.
  • Once fried, remove the bajjis and place them on a plate to allow excess oil to drain.
  • Slit open the bajjis in the same place where the chilies were cut before frying.
  • Stuff the onion-coriander leaves mixture inside the bajjis.
  • Squeeze a few drops of lemon juice on top.
  • Sprinkle a pinch of chat masala and a pinch of red chili powder on top.
  • Repeat the process for all the bajjis.
  • Serve the bajjis with the chutney of your choice along with the hot tea.
