Fiery Dragon Chicken Recipe: A Spicy Delight in Every Bite

Ingredients:

  • 250 grams boneless chicken, cut into bite-sized pieces1 tablespoon corn flour
  • 1 tablespoon refined wheat flour or all purpose flour (maida)
  • 1/4 tablespoon ground black pepper 
  • 1/2 tablespoon salt (1/4 tablespoon for marination and 1/4 tablespoon for fry)
  • 10 garlic cloves, sliced ( 2 for marination and 8 for fry)
  • 2 tablespoons dark soy sauce (1/2 tablespoon for marination and 1½ tablespoon for fry)
  • 1 Egg 
  • 10 tablespoons cooking oil
  • 1 medium sized onion, sliced
  • 8 dried red chilies, slit
  • 20 whole cashews
  • 2 tablespoons red chilli sauce
  • 1 tablespoon tomato ketchup
  • 1 tablespoon white sesame seeds
  • 3 to 4 tablespoons water
  • 1/4 medium sized capsicum, sliced
  • 3 scallions, sliced for garnish

Directions:

Marinating the chicken:

  • In a mixing bowl, add the chicken pieces, corn flour, refined wheat flour (maida), ground black pepper, 1/4 tablespoon salt, 2 garlic cloves (sliced), 1/2 tablespoon dark soy sauce, cracked egg. Mix well until the chicken is coated evenly. Let it marinate for 20-30 minutes, allowing the flavors to penetrate the chicken. 


Deep Frying the Marinated Chicken:

  • Heat cooking oil in a pan or wok over high-flame for deep fry.
  • Add the marinated chicken pieces one by one to the pan as it can accommodate. Make sure there is enough space for the pieces to move freely while deep frying them.
  • Once the chicken pieces turned brown and cooked, move them into a bowl to allow  the oil on the pieces to dry out.

Note: If you have a large quantity of chicken, it's best to fry them in batches rather than overcrowding the pan. Overcrowding can cause the chicken to stick together and result in uneven cooking.


Cooking the Dragon Chicken:

  • Heat a pan over medium flame.
  • Add 2 tablespoons of the oil used in deep frying process and add it to the pan.
  • Add 8 cloves of garlic (sliced) into the pan and saute them for few seconds.
  • Add the sliced onion and dried red chilies into the pan and saute them for few seconds.
  • Add the cashews into the pan and saute them for few seconds.
  • Add the remaining dark soy sauce, red chilli sauce, tomato ketchup and salt. Stir fry them well for few seconds.
  • Add the white sesame seeds and saute for few seconds.
  • Add 3 to 4 tablespoons of water, sliced capsicum to the pan. Stir fry them for a 2 minutes or until the capsicum turns tender.
  • Add the deep fried chicken into the pan. Stir fry them until the mixture is coated evenly on the chicken pieces.
  • Add the scallions to the pan and turn off the heat. Transfer it to a serving dish.
