Creamy Dates Kulfi Recipe - Without Condensed Milk

5 medium sized kulfis
Ingredients:
- 250ml of boiled hot full-fat milk, for soaking
- 250ml full-fat milk, boiled and cooled, for blending
- 150g de-seeded dates
- 40g almonds
- Cardamom seeds from 3 pods
Directions:
- In a boiling pan, heat the 250ml of full-fat milk over medium heat until it comes to a boil.
- Once the milk is boiled, in a large bowl, add the de-seeded dates, almonds and boiled hot milk. Allow the dates and almonds to soak in the boiled milk for at least 30 mins.
- In a blender, add the soaked mixture and blend it. Then add the boiled and cooled milk and cardamom seeds to the blender. Blend until you achieve a smooth and creamy consistency.
- Pour the mixture into the Kulfi molds or popsicle molds, leaving a little space at the top for expansion. Insert the Kulfi sticks or popsicle sticks into the molds. If you don't have specific molds, you can use small cups and aluminium foil to cover as alternatives.
- Place the molds in the freezer and let them freeze for at least 6 hours or overnight until the Kulfi is completely set.
- Once fully frozen, remove the kulfi molds from the freezer and gently remove the kulfi from the molds by dipping them in warm water for a few seconds and then sliding them out onto serving plates.
- Serve the rich and creamy Dates Kulfi immediately and enjoy! Feel free to garnish the Kulfi with some additional chopped nuts before serving.
