Ingredients:

  • 250 gm boneless chicken
  • 1 medium-sized onion, finely chopped
  • 2-3 green chilies, slit
  • 1 inch ginger
  • 2 garlic cloves
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 tablespoon fresh mint leaves, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground black pepper
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon chat masala
  • 1 teaspoon lemon juice
  • Salt to taste
  • 1 teaspoon oil for basting
  • Oil for grilling, as required
  • Skewers for grilling

Directions:

  • In a blender, add the ginger, garlic cloves and green chilies; blend them until coarse paste.
  • Add the boneless chicken into the same blender along with the ground paste. Grind until the chicken reaches the ground or minced consistency.
  • In a large mixing bowl, combine the ground chicken, finely chopped onion, mint leaves, coriander leaves, lemon juice, coriander powder, red chilli powder, garam masala, ground black pepper, cumin powder, chat masala, turmeric powder, salt and 1 teaspoon of cooking oil. Mix thoroughly to ensure all the ingredients are evenly incorporated.
  • Take a small portion of the mixture and shape it around a skewer, pressing it gently to form a long, cylindrical kebab. Repeat this process with the remaining mixture and skewers.
  • Preheat the grill pan to medium-high heat and spread the cooking oil with basting brush.
  • Place the kebabs on the grill pan and cook for about 12-15 minutes, turning occasionally, until they are evenly browned and cooked through.
  • Once the kebabs are cooked, remove them from the heat and allow them to cool slightly. Carefully slide the kebabs off the skewers.
  • Serve the Chicken Seekh Kebabs hot with a side of mint chutney, sliced onions, and lemon wedges. These kebabs pair perfectly with naan bread or fragrant rice.
