Pallipalayam Chicken Recipe - A Spicy Delight

Introduction:

Pallipalayam chicken is a delicious South Indian dish known for its rich flavors and spicy taste. Originating from the town of Pallipalayam in Tamil Nadu, this recipe is a popular favorite among chicken lovers.  Ingredients:

  •  3 to 4 tablespoons gingelly (sesame) oil
  •  1/2 teaspoon mustard
  •  1/2 tablespoon cumin seeds
  • 2 sprigs of curry leaves
  • 8 garlic cloves, crushed
  • 1 inch ginger, crushed
  • 12 dried red chilies, de-seeded and slit
  • 1/2 teaspoon turmeric powder
  • 100g shallots, crushed
  • 500 grams chicken, cut into small pieces
  • Salt to taste
  • Water
  • 2 to 3 tablespoons chopped coconut
  • Coriander leaves for garnish



 
Directions:
  • Heat the gingelly (sesame) oil in a large pan or kadai over medium heat. Add the mustard, cumin, curry leaves, crushed garlic and ginger. Saute for 2-3 minutes until the raw aroma of garlic and ginger disappears.
  • Add the de-seeded and sliced dried red chilies and turmeric powder. Saute them for 2 minutes.
  • Add crushed shallots and saute them until the shallots turn translucent.
  • Add chicken and salt to the pan; and stir fry them until they are lightly browned all sides. This helps seal in the juices and enhance the flavor.
  • Add water and chopped coconut, saute them for 1 to 2 minutes.
  • Cover the pan with a lid and let the chicken cook on low-heat for 15 to 20 minutes or until it becomes tender.
  • If you prefer a spicier taste, you can add more red chili powder at this stage.
  • Once the chicken is cooked, remove the lid and increase the heat to medium-high. Stir-fry the chicken for a few minutes to enhance the flavors and allow the excess moisture to evaporate.
  • Towards the end of cooking, sprinkle freshly chopped coriander leaves over the Pallipalayam chicken. Stir-fry the chicken for a few minutes, allowing the vibrant flavors of the coriander to meld perfectly with the chicken.
  • Serve the Pallipalayam chicken hot with steamed rice along with your favorite curry.
