Carrot Rice - Easy To Cook Recipe

Ingredients (Servings - 3):

  • Cooked rice
  • 5 to 6 medium sized carrots, grated
  • 1 medium sized onion, finely chopped 
  • 4 to 5 green chilies, chopped
  • 2 cloves, minced
  • 1/2 inch of cinnamon, minced
  • Cooking oil -2 table spoon
  • Ghee 1 table spoon
  • Cashews - 8 to 10
  • Curry leaves
  • Salt to taste
  • Fresh coriander leaves for garnish



Directions:

  • Heat the cooking oil and ghee in a pan over medium heat.Add the minced cinnamon and cloves; and saute it for a few seconds.
  • Add the cashews to the pan and saute them until they turn light brown color.
  • Add the chopped onion and green chilies to the pan. Saute until the onion turns translucent.
  • Add the curry leaves and saute them for a few seconds.
  • Next, add the grated carrots to the pan. Allow the carrot to cook for about 10 mins until the carrots become slightly tender. Stir-fry the carrot occasionally while it is cooking.
  • Add the cooked rice to the pan and gently mix it with the carrot mixture until well combined. Ensure that the rice is evenly coated with the vibrant orange color.
  • Next, sprinkle the salt and gently mix the rice.
  • Reduce the heat to low, cover the pan, and let the carrot rice simmer for about 5 minutes. This allows the flavors to meld together.
  • Once the rice is heated through, remove the pan from the heat. Give it a final stir and let it sit, covered, for a few more minutes to absorb any remaining moisture.
  • Serve the carrot rice hot, garnished with fresh coriander leaves for a refreshing touch.
