Creamy Badam Kulfi Recipe - A Delectable Indian Frozen Dessert

Ingredients:

  • 500ml whole milk
  • 80ml boiled milk
  • 30g almonds (badam)
  • 60g sugar
  • Cardamom seeds - 2 pods
  • 1 tablespoon chopped almonds for garnish 

Directions:
  • Soak the almonds (badam) in water overnight.
  • Peel the soaked almonds. 
  • In a blender, add the peeled almonds, cardamom seeds and 80ml of boiled milk; grind them into paste and keep it aside.
  • Next, heat the whole milk in a pan over low heat until it becomes little condensed. Stir the milk continuously while it heats up to prevent it from sticking to the bottom and sides of the pan.
  • Add sugar and badam paste to the milk; and stir the mixture continuously for 10 minutes. This will allow the flavors to infuse and the mixture to thicken slightly. Be careful not to let it boil.
  • Remove the pan from the heat and let the mixture cool down to room temperature. The mixture will get thicken even more.
  • It can be consumed as badam milk after refrigerating it for sometime and garnishing it with chopped badam. You can use pistachios as an alternative for garnishing.
  • Lets continue our Kulfi preparation process. Pour the mixture into kulfi molds or small individual-sized cups. If you don't have specific molds, you can use small cups and aluminium foil to cover as alternatives.
  • Optional - Add chopped badam to the mixture before pouring it into the molds.
  • Place the kulfi molds in the freezer and allow them to freeze for at least 6-8 hours.
  • Once fully frozen, remove the kulfi molds from the freezer and gently remove the kulfi from the molds by dipping them in warm water for a few seconds and then sliding them out onto serving plates.
  • Garnish the Badam Kulfi with a sprinkle of crushed/chopped badam for an extra touch of elegance. You can also add use pistachios as a alternative for garnishing.
  • 2 to 3 Kulfi popsicles can be made from the above amount of ingredients.
