INGREDIENTS:
- Amaranth leaves (Thotakura/Mulaikeerai) - 160g
- Gram flour - 3 tablespoon (50g)
- Green chili - 4
- Ginger garlic paste - 1 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/4 teaspoon
- Cumin powder - 1/4 teaspoon
- Coriander powder - 1/4 teaspoon
- Cooking soda - 2 pinch
- Onion - 2 medium sized (130 g), finely chopped
- Tomato - 2 small sized (120 g), finely chopped
- Garam masala - 1/2 teaspoon
- Curry leaves - 1 sprig
- Salt to taste
- Oil - 4 tablespoon
DIRECTIONS:
- Wash the amaranth leaves thoroughly, repeating the process 3 to 4 times to remove any dust or impurities.
- In a pan over medium heat, add the washed amaranth leaves and green chilies, cover, and cook for 5 minutes. Then turn off the flame and let it cool.
- In a mixer or blender, add the cooled amaranth leaves and green chilies and grind them into a fine paste without adding any water.
- In a mixing bowl, add the ground amaranth leaves paste, gram flour, cooking soda, and garam masala. Mix well to form a thick batter-like mixture.
- Grease a plate with oil and spread the mixture evenly onto the plate with approximately 3/4 inch thickness.
- In a steaming pan, add some water and place the shaped mixture on the greased plate in a steamer. Steam it for approximately 20 minutes over medium heat, making sure the plate is above the water level.
- After 20 minutes, check if the batter is cooked by inserting a knife. If the knife comes out clean without the mixture, then it is cooked. Turn off the flame and let it cool down.
- Once cooled down to room temperature, cut the steamed mixture into small cubes and set them aside.
- Heat 2 tablespoons of oil in a thick-bottomed pan over medium heat. Add the steamed cubes and sauté for about 3 minutes or until the raw smell disappears. Transfer the cubes to a separate bowl.
- In the same pan, add another 2 tablespoons of oil over medium heat. Add the finely chopped onions, curry leaves, and salt. Stir fry until the onions turn translucent.
- Add the finely chopped tomatoes and green chilies to the pan. Mix well and cover cook until the tomatoes become soft and cooked.
- Add the turmeric powder, red chili powder, cumin powder, and coriander powder. Mix well and sprinkle 2 tablespoons of water. Sauté until the spices are well cooked.
- Add the sautéed cubes and chopped coriander leaves to the pan. Sauté for 2 minutes over medium heat, ensuring that the cubes are well coated with the spices.
